Vanilla Bean Swiss Meringue Buttercream

August 16, 2022 by carolineocrockett

vanilla bean swiss meringue buttercream

The details

Vanilla bean swiss meringue buttercream (AKA SMBC) is my favorite frosting on planet Earth. What sets it apart from regular American buttercream is its silky silky texture, gorgeous sheen, and amazing workability as this buttercream pipes and spreads SO beautifully. It may take a bit of extra work and about a million egg whites (save those yolks for curd), but it pays off in it’s luxuriousness which elevates any cake to decadence. Here’s how to make, store, and troubleshoot my favorite vanilla bean swiss meringue buttercream. You are welcome!!

Classic Yellow Cake with Chocolate Buttercream

April 19, 2022 by carolineocrockett

classic yellow cake with chocolate buttercream

The details

Everyone needs a classic birthday cake recipe. Make it for yourself on your birthday (no shame, I do it) or save this recipe for someone special’s day. Either way, this Classic Yellow Cake with Chocolate Buttercream is cause for celebration. The cake itself is rich with egg yolks, buttery, and dense without being weighed down. It is moist and melts in your mouth. And the frosting, let me tell you. This is my favorite buttercream of all time. Rich, chocolatey, creamy, but not overly sweet. The secret is in the cream cheese/butter mixture. Make it once and it will become your go-to!

Coffee Black Cocoa Cake

April 19, 2022 by carolineocrockett

coffee black cocoa cake

The details

Say hello to my new favorite cake flavor combo! Coffee Black Cocoa Cake is a rich, indulgent black cocoa cake with a silky, strong coffee buttercream. The cake has a tight crumb and a moist texture. It’s deeply chocolatey but not too sweet. The swiss meringue buttercream is the smoothest and creamiest, like a very milky cup of coffee. Together, these two components totally sing. Say yes to coffee any time of day!

The Best Passion Fruit Curd

March 25, 2022 by carolineocrockett

passion fruit curd

the details

This passion fruit curd is the nectar of the gods! In fact, it’s so good, I think it deserves its own post. Passion fruit is an amazingly delicious tropical fruit that you can find pretty much year round in certain grocery stores. It’s heady, fragrant, and the perfect mix of tart and sweet. You’ll find I am very obsessed with it and will use any excuse to use passion fruit in my desserts. This curd is my fine-tuned, to-go for all things passion fruit. It is so versatile and palate-pleasing. Not only that, it’s far easier to make than you mighty think. Give it a try, and never look back!

Dad’s Salted Caramel Apple Pie

October 21, 2022 by carolineocrockett

salted caramel apple pie

The details

This Salted Caramel Apple Pie is an ode to the pie my Dad has made for every Thanksgiving/Christmas/holiday event since I can remember, and it is my absolute favorite. He doesn’t have a recipe per say, but rather eyeballs a bunch of ingredients, mixes them with sliced apples, and dumps them into a Pillsbury pie crust. Yet somehow it is AMAZING every time?? It’s magic. After watching carefully for a few years now, I’ve put a spin on his classic recipe (classic to me at least) by incorporating my all-butter pie crust, an apple layering technique, and most importantly dumping homemade salted caramel to be baked in there. The result is flaky, buttery, gooey spiced apple goodness and I think it does his recipe proud.

Dark Chocolate Pudding Pie

October 19, 2022 by carolineocrockett

dark chocolate pudding pie

The details

When I was little I was allergic to eggs (thankfully I grew out of this allergy) so for every special occasion, my mom brought along a pudding cup for me. Everyone else ate birthday cake, I ate chocolate pudding. And that’s where my chocolate pudding obsession began. So much so, that it made its way onto our Thanksgiving table. Soon, pudding pie became a staple at Thanksgiving and my cousins and I would just devour it every year! This dark chocolate pudding pie is my from-scratch take on the classic Jello pudding pie, but with high quality ingredients and no gelatin involved. This pie contains a deliciously rich and slightly salty chocolate cookie crumb crust, deeply flavored dark chocolate pudding layer, chocolate mousse layer, and finally fresh vanilla whipped cream. It’s rich, creamy, and utterly delicious!

Salted Honey Butter Yeast Rolls

October 18, 2022 by carolineocrockett

salted honey butter yeast rolls

The details

Thanksgiving is not Thanksgiving without yeasted rolls. I want rolls that are so squishy I could snuggle between them. I want them a little sweet and salty too. These Salted Honey Butter Yeast Rolls are all of the above and come together so easily given a little plan-ahead. Inspired by milk bread, they are irresistibly tender, yeast-y, and balanced due to honey butter and flaked sea salt to finish. Think King’s Hawaiian rolls but dialed back, homemade, and Thanksgiving. I think you’ll love them as much as I do!

Pumpkin Spice Espresso Muffins (Dairy Free)

September 26, 2022 by carolineocrockett

pumpkin spice espresso muffins

The details

Pumpkin Spice Espresso Muffins are my personal take on a PSL, but make it dairy-free. Charlie recently figured out he has lactose intolerance (womp womp) so I’ve been on a bit of a mission to make more bakes dairy free so he can enjoy them without feeling yucky the next day. Trust me, you will not miss the dairy in these. They have a nice, dense, moist texture (think Starbucks pumpkin loaf, my beloved) and are perfectly spiced with a homemade pumpkin spice blend. Top that off with a kick of espresso to jump start your day and an optional espresso glaze. To boot, these are a no mixer recipe and come together in no time! Enjoy, PSL lovers.
