I developed this healthy coconut honey granola for a custom order for a product launch–the client wanted to highlight coconut as an ingredient and keep the granola as simple, organic, and healthy as possible. I loved this challenge! It’s true that many (okay, most) of my recipes here involve copious amounts of butter and are not intended to be health food. But I also truly believe in balance and moderation and think there is absolutely a time and place for this granola which is SO satisfying, simple to throw together, and just feels good to enjoy since it’s so nourishing. This coconut granola comes together in 30 minutes start to finish and uses only 7 (seven!) ingredients. It’s sweetened only with honey and has a complex, snackable flavor due to vanilla, coconut chips, and coconut oil. Chia seeds provide a nutritional boost and a perfect crunch to this wholesome snack!
Granola Notes
Like all granola, this one is based in rolled oats and in this case, dessicated unsweetened coconut chips. It’s sweetened with only honey (use local honey if you can!) and utilizes lots of superfoods including coconut oil and chia seeds. It’s simple, frankly addictive, and SO easy to throw together. I love to have a jar of granola around the house but it also makes a fantastic gift or party favor!
Add finely chopped dried fruit (mango or pineapple would be delish) if that’s your thing. Nuts wouldn’t hurt either! But I love the simplicity of this granola it is, and the way the coconut flavor shines through without hitting you in the face. I think you’ll love it.
Chia seeds in this recipe are optional but highly recommended. Apart from being amazing for you (see all these health benefits) they also impart a really nice crunch and seediness to the granola. Since like all my recipes, this one is nut-free (excluding coconut as a tree nut since most people with tree nut allergies do NOT react to coconut) so the extra texture goes a long way.
This coconut granola is pictured here atop greek yogurt and my favorite passion fruit curd which I pretty much will take any excuse to use, and pairs beautifully with the rich tropical flavors in this granola. Talk about a dream summer breakfast.
The process
This granola is so easy to make that a whole section for process honestly feels silly. But I’ll break it down for you anyways, in case you aren’t COMPLETELY sold on making it.
- Mix together honey, vanilla, coconut oil.
- Add oats, salt, coconut chips, and chia seeds.
- Mix until coated.
- Spread on a pan and bake.
- Allow to cool and enjoy.

PrintHealthy Coconut Honey Granola
This wholesome, nourishing coconut honey granola is the perfect way to tropical summer flavors! This recipe utilizes superfoods galore and is sweetened only with honey.
- Yield: 6–8 servings 1x
Ingredients
- 3 cups rolled oats
- 1 cup unsweetened coconut chips
- 1 1/2 tbsp chia seeds
- 1/4 tsp sea salt
- 1/2 cup honey
- 1/4 cup extra virgin coconut oil, melted
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 325 degrees F. Prepare a baking sheet with parchment or silpat to prevent sticking.
- In a large mixing bowl, combine melted coconut oil, honey, and vanilla extract. Whisk well until completely combined. Add oats, coconut chips, chia seeds, and salt to the wet mixture and toss with a spatula until dry ingredients are evenly dispersed and covered in honey mixture.
- Turn out the granola onto your prepared baking sheet, spreading the clusters into an even layer.
- Bake at 325 degrees F for 15 minutes until the granola just begins to deepen in color. Remove from oven and using a spatula, mix the granola around and re-distribute in an even layer.
- Continue baking 5-ish more minutes, until the granola is golden brown and coconut chips appear toasted. The granola will be fragrant and delicious!
- Allow granola to cool completely on the pan before breaking into clusters and transferring to your storage container. I like to keep my granola in a glass jar with an airtight lid. Enjoy!
Notes
- This granola is delicious as a snack all by itself, but we also like it atop vanilla yogurt.
- Granola keeps well at room temperature in an air-tight container for up to 2 weeks.
