I am slightly embarrassed to say this, but Dulce de Leche is a new discovery for me. I’ve always been a caramel person, but I had some dulce as a filling in a wedding cake recently and it was immediately love. I was that girl running around the wedding talking about how good the cake was (sorry, Jack + Kate!). Anyways, there are many things I love about dulce but one of them is it is SO easy make. Another is that it reminds me of some of the Tex-Mex desserts in Austin, TX where I grew up. Once you go dulce, you never go back. Put it on top of fudgy, chewy, and deeply chocolately brownies, and they all melt together and you get creamy-rich-fudgy-caramelized. These Dulce de Leche Brownies are to. die. for.

Orange Creamsicle Muffins

The details

I’ve never been a huge orange girl, especially in my baking. But my mind was officially changed when I came up with my Olive Oil Cake which uses fresh orange zest and juice. I couldn’t get enough. So much so that I wanted to devote a whole recipe to that delicious orange flavor and amp it up with creamy vanilla. And so these Orange Creamsicle Muffins were born! I love that they really taste like a creamsicle pop (sooo nostalgic) with all natural ingredients. Nature just wanted this! These muffins are moist (yes) and just have the most ideal snacking cake texture. The orange cream center, rich and creamy with cream cheese and more orange zest/juice, just puts them over the top.

Blue Cheese Buttermilk Biscuits

Blue cheese can be a polarizing topic. But let me be clear, I am FIRMLY in the pro-blue camp and say the funkier, the better. Blue lends just the richest salty, savoriness to everything so I wanted to incorporate it into a biscuit for purely selfish reasons. Turns out, these biscuits are just as amazing as I always dreamed. They have solid flakes, bake up tall enough to easily spit in two + make a yummy biscuit sammy, and have JUST the right amount of blue flavor to complement the biscuit but not overtake it. And naturally, since we have a salty, savory biscuit, they are topped with a salted honey butter. Yup, these Blue Cheese Buttermilk Biscuits are just really really really good. You should definitely make them.

Cardamom Pretzel Twists

When I asked my husband, Charlie, if he had any requests for new recipes for the blog, his answer was pretzels (???). I was a little baffled considering all the amazing things that can be baked out there. But, I did ask for his opinion, so I started testing out pretzel doughs. I settled on this one, which is simple, stands up to twisting and shaping, and has a nice salty edge which makes it clearly pretzel and pairs nicely with its sugary coating. But I didn’t want to make just a regular old pretzel (though you could totally double this dough recipe, omit the sugar and spices, sprinkle with coarse salt and it would be great). So we went down the cinnamon-sugar coating route, and I quickly settled on cardamom. Ground cardamom is made from little pods and has an incredibly delicious cinnamon-meets-licorice flavor that I personally love. It’s toned down a bit by (lots) of cinnamon here, but you definitely taste it. I think cardamom really elevates these Cardamom Pretzel Twists from a one-note cinnamon sugar pretzel. I hope you agree.
