Crunchy, fluffy, sweet, and spicy, these Ginger-Peach Muffins have all the textures and flavors going on for a great start to your day. Sweet peach and warm ginger complement each other sooo well. We’ve got 2 types of ginger (ground and chunky candied ginger that melts when it baked) in the muffin batter, and candied ginger chunks in the streusel to boot! The result is a noticeable but not-too-strong ginger flavor which is subdued by the sweetness from brown sugar and peaches. It’s some major yin and yang action. The muffins come together with mostly spatula mixing and are easy scoop-and-bake. Nothing technically challenging here, which is a nice breath of fresh air! Since I like to eat them for breakfast, I personally like my muffins to be not too sweet. If you prefer a sweeter muffin, feel free to increase the brown sugar amount in the batter by 1/4 cup.

Holy moly, these super cinnamon rolls. Look, are they the neatest or most uniform looking? Nope. Do they taste way better and more perfect and just over the top yummy despite it? Oh, yes. These cinnamon rolls stick with the classic cinnamon roll flavors we know and love–brown sugar, cream cheese, vanilla bean, buttery soft dough, and looooots of cinnamon. They are rich. They are so pillowy soft you want to poke them. They are slathered in amazing cream cheese/vanilla bean frosting. They are just so damn good.

Double Blueberry Bagel Bombs

One of my favorite brunch recipes is Christina Tosi’s recipe for bagel bombs from Momofuku Milk Bar. People are always so impressed by this bake–a savory cream cheese center wrapped in salty dough– but honestly it is pretty easy to put together! My favorite bagel is blueberry (sorry, bagel purists out there) and this is my very own take on the bagel bomb. I love these Double Blueberry Bagel Bombs for breakfast, snack, whatever. The blueberry flavor comes through in both the cream cheese filling and the dough. It is slightly sweet but not overkill. Like your favorite bagel, the dough has some squishy chew to it. Take a bite and you’ll find it’s bursting with the most delicious blueberry cream cheese. I could eat it by the spoonful. Let’s be honest, these guys are not the most photogenic, but they are very, very tasty.

Coconut Oil Espresso Brownies

I’m notorious in our house for getting boxed brownie mix and “doctoring” it up to make it better. I like to add espresso powder and use coconut oil instead of canola, as it makes brownies insanely rich and fudgy. As it turns out, what’s even better than that are these from-scratch, coconut oil espresso brownies. They’ve got strong notes of espresso, sea salt, and rich cocoa. They are ever-so-dense and melt in your mouth. And you can feel really good about replacing the butter/oil with coconut oil, which has antioxidant benefits.
