Welcome to my passionfruit obsession. I first discovered how amazing passionfruit is while on my honeymoon in Nicaragua. They can be hard to find in the US, but are so worth it. Passionfruit are fragrant, heady, tart, and tropical. It has to be one of my favorite flavors in the whole entire world. Because this passionfruit curd is particularly tart (just the way I like it), it pairs nicely with fluffy, light, and sweet vanilla bean meringue clouds. Basically, this recipe is a cute lil mini pavlova. I love to enjoy this these Passionfruit + Vanilla Bean Meringue Clouds in the spring and summer.

Rich + Fudgy Chocolate Sheet Cake

Here’s one for the chocolate lovers out there. I definitely am one. I wanted my signature chocolate cake to be richly flavored with espresso, fudgy without being dense, and slathered in creamy, rich, and not-too-sweet frosting. This one fits the bill. Not only that, but chocolate sheet cake is a great one for those who are a little bit wary of assembling layer cakes. Simply mix the batter, pour into a prepared pan, bake it up, and slather on that delicious chocolate buttercream. You can decorate with frosting swoops from a spatula or pipe it on like I did (I used Wilton tip No. 8B). The frosting is pretty foolproof, looks amaze, and tastes even better. Sometimes dessert doesn’t have to be complicated to impress. Oh, listening to Barry White while making this Rich + Fudgy Chocolate Sheet Cake is not optional.

Fluffy Key Lime Tart

I think we can all agree key lime pie is great. It’s one of those quintessential summer (or if you’re me, year round) favorites that I think of as a real treat. The only thing is…I am kind of grossed out by sweetened condensed milk, which is a traditional ingredient of key lime pie. Anyone else with me?? I always thought there must be a better way. To keep the tartness of the key lime, but reduce the syrupy sweetness and heaviness of traditional key lime filling. So here we are, my Fluffy Key Lime Tart.

Lemon + Lavender Poppyseed Loaf Cake

Tea time, anyone?? This Lemon + Lavender Poppyseed Loaf Cake boasts a fine, velvety crumb and a complex flavor profile of zesty lemon, sweet almond, and floral and fragrant lavender. The cake has that subtle crunch from the poppy seeds and has a crusty, sugary top thanks to lavender sugar. This recipe was inspired by and based on a poppy seed loaf cake that a family friend, Mary Wheless, makes. I absolutely loved it from first bite, and apparently was not subtle about this because I feel like a loaf shows up whenever we go to the same place! I’m definitely not mad about it. Mary was nice enough to share her recipe with me, and I adapted it with the addition of butter and lemon zest, and re-tooled the glaze topping to include homemade lavender sugar and lemon juice for a zingy balance to the sweetness of the cake.
