Springtime is here and summer is fast approaching, so it’s time to get on the ice cream train! Once you have a machine, ice cream is unbelievably easy to make and so rewarding to dig into (literally). This vanilla bean ice cream is honestly perfect on its own BUT THEN we swirl in caramelized, smooth dulce de leche and whew it’s just bananas. The dulce complements the vanilla flavor without overpowering it, so you really get to enjoy both flavor components here. My dad doesn’t even like vanilla ice cream, and he went back for thirds sooooo…

Also, I need to mention that dulce de leche is CRAZY EASY to make. You just make it from one can of sweetened condensed milk, and you don’t even open the can until the dulce is finished. Yep, you read that right. You can find more details about my new fave ingredient here or in the instructions of this recipe. It requires a little planning ahead time-wise, but it’s well worth it. This dulce de leche ice cream is reaaal good.

Red Velvet Brownie Cookies

I’ve really done it this time. Charlie is a staunch non-red velvet fan, and even he can’t get enough of these cookies! They are gooey, fudgy, a little chocolately, very vanilla, and all wrapped up in a grab-and-go cookie. These Red Velvet Brownie Cookies are best served warm because melty white chocolate + fudgy brownie consistency=magic. I somehow felt called to make these in the midst of all this spring baking, and I think it was a stroke of brilliance although red velvet seems to be more of a winter flavor. Oh well, I’m dubbing these cookies year-round appropriate!

The Best Passion Fruit Curd

This passion fruit curd is the nectar of the gods! In fact, it’s so good, I think it deserves its own post. Passion fruit is an amazingly delicious tropical fruit that you can find pretty much year round in certain grocery stores. It’s heady, fragrant, and the perfect mix of tart and sweet. You’ll find I am very obsessed with it and will use any excuse to use passion fruit in my desserts. This curd is my fine-tuned, to-go for all things passion fruit. It is so versatile and palate-pleasing. Not only that, it’s far easier to make than you mighty think. Give it a try, and never look back!

Salted Caramel Layer Cake

My MIL loves a caramel cake. Actually, I feel like I know a good handful of people who live and die for those Caroline’s layered caramel cakes. Those are good, but I always wanted to create a salted caramel cake with true caramel flavor and smoother, creamier frosting. Enter, my Salted Caramel Layer Cake! Dang this cake is rich and buttery and filled with burnt sugar/butterscotchy flavor. The base is a browned butter layer cake, with my Salted Vanilla Bean Caramel as the filling and all smothered in an amaaazing salted caramel buttercream. The result is both light in texture and dense in flavor. When you cut into the cake, it oozes salted caramel. I mean, what else could you want. It will please any caramel lover out there!
