Lemon Blackberry Pound Cake

March 22, 2022 by carolineocrockett

The details

Pound cake!! Gosh it’s so good. I’ve been working on my perfect pound cake recipe for a while. It’s got to be dense, melt-in-your-mouth, balanced in flavor, and with a tender, creamy crumb. This Lemon Blackberry Pound Cake has all that, plus tart lemon flavor and a delicious blackberry-honey reduction. I love lemon flavor, especially when paired with spring and summer berries–strawberries, raspberries, blackberries, blueberries, I love it all. The flavor combo is so light and bright, and just screams warmer weather and the coming of Spring. This cake is delicious during the daytime and would make a great Easter lunch treat.

Baby Banana Smash Cake

banana smash cake

the details

This one’s for all the baby mamas out there. This banana smash cake is perfect for your little one’s first birthday party! When Hudson turned one, I wanted to make him a cake that he could eat as much of as he wanted, without having to stop him to keep him from having the world’s most intense sugar rush. He loved what I made him and actually ate almost the whole thing. And then fed some to the dog, naturally. I was so relieved I didn’t make him a more traditional sugar-filled cake, I don’t know if his little baby bod could have handled that!

About a year later, a good friend asked me to make her son’s smash cake. And here we are! This cake is made with primarily maple syrup as its sweetener and no salt. It’s made moist with coconut oil rather than butter. The result is a cake that tastes like lightly sweetened banana bread and a frosting that is essentially a vanilla scented cream cheese. Not only is it healthier but it’s such a cutie! It’s the perfect size for a little one year old. I like to have fun with smash cakes by dying the frosting pretty colors and finding on-theme sprinkles. Top it all off with a cute candle, and you’ve got yourself an impressive smash cake!

Birthday Cake Ice Cream

March 15, 2022 by carolineocrockett

birthday cake ice cream

The details

I got an ice cream maker for my 30th birthday this year (thanks, Dad) and I am absolutely obsessed with it. There’s something about mixing up a milky custard, watching the cream churn, and swirling in yummy mix-ins that really makes me happy. Any one else?? I love all things birthday cake/funfetti/sprinkle (in case that’s not obvious) so birthday cake ice cream was at the top of my list. This Birthday Cake Ice Cream is super creamy thanks to half n half and heavy cream (we are not messing around here) and has that funfetti taste courtesy of clear vanilla extract. It’s got plenty of rainbow sprinkles throughout and ripples of birthday buttercream. Wow, it’s just so so good. I don’t even know how to explain how good it is.

Go-to Yeasted Pizza Crust

March 15, 2022 by carolineocrockett

The details

I was one of those people who made frozen pizza (or got takeout) on pizza night. But not anymore!!! It turns out that making pizza crust from scratch is just about as much effort as driving to grab a takeout pizza, and soooo much more fresh and delicious. This is my go-to, classic New York-style pizza crust. It’s heavy on the yeast (because that’s how it should be) and has just enough salt and sugar to impart some flavor without overpowering the amazing-ness of your toppings. Stretch this pizza crust nice and thin, and you’ll have nice crisp crust on the bottom and bubbly, chewy dough on the crust. That’s the dream, right?? Ditch the frozen pizza forever. Seriously!
