Rhubarb season is here! I found the most gorgeous ruby-colored rhubarb at the grocery store earlier this week, and knew that it was time. Rhubarb Red Berry Cobbler celebrates the magnificence of fresh rhubarb paired with sweet strawberries and raspberries. It’s all topped off with a sweet honey biscuit situation that is just very very scrumptious, especially topped with a scoop of vanilla ice cream.

Here she is, my Small Batch Focaccia with Hot Honey Ricotta! I’ve been working on this bread for a while, and though focaccia is a relatively easy bread, I wanted to get it just right. This recipe is small batch so it’s perfect for couples or people who are cooking for one. Double it, and you have plenty to feed a small family. This focaccia is yeasty (which I love), salty as heck, savory from EVOO, and herby from rosemary. And then, we pair it with this delish whipped hot honey ricotta spread. In the end, it hits all the flavor notes–sweet, spicy, salty, savory, acidic. It’s an amazing appetizer (or lunch for two, as we have done). Make it in a slightly smaller pan for thicker bread and you’ve got bread for one amazing sammy.

I guess we really like key lime pie in this house! This is my second recipe that is a take on key lime pie, and all I’ve got to say is sorry not sorry. There’s just something to the flavor combo of buttery graham crunch and creamy tart key lime. These key lime pie cookies capture both those important elements of key lime pie, but in a buttery and chewy cookie! These cookies are inspired in part by both elements of Christina Tosi’s key lime pie cake recipe in All About Cake and Sarah Kieffer’s cream cheese smear technique from her red velvet cookies.

I’ve been sitting on my vanilla cake recipe for some time, and have finally decided to whip it out to celebrate my baby (kid???)’s 2nd birthday! This perfect vanilla layer cake is fluffy, moist, tender, open-crumbed, and all-around delicious. It stands up to the weight of buttercream and filling when layered but remains light in texture and flavor. Basically, it lives up to its name. It’s the perfect blank canvas to a fun filling or buttercream. Or keep it classic and stick with vanilla buttercream for a cake that pleases all.
